Miss Zilm Watervale riesling
Vineyard & Vintage:
Sourced from a single site on the northern boundary of the Watervale
sub-GI, this 40+ year old vineyard is a benchmark for the area. The soil
profile is classic Clare; terra rossa red loam over limestone, with
interspersed patches of slate.
Winemaking:
The fruit was harvested in the cool of night and delivered to the winery
at dawn where it was destemmed and gently pressed. The ferment was
cool and controlled with minimal intervention to maintain the delicacy
and purity that is representative of this unique site.
What you see:
Pale straw.
What you smell:
Opens with a broadside of lime, followed by orange blossom and wild
fennel.
What you taste:
The palate has racy acidity and fine texture on a backbone of Tahitian
lime and orange sherbet.
