Mitchell Sparkling Peppertree shiraz
Bright ruby in the glass with a fine bead on the tongue that shows lifts of youthful sour cherry with earthly undertones leading in to a lingering plummy richness.
Vineyard Region
Fruit for this wine is grown in our mature, dry grown vineyard that yields just one tonne per acre. No artificial fertilisers, pesticides or herbicides were used and the vineyard has had regular biodynamic sprays since 2005.
Winemaking
With a secondary ferment in the bottle, aged on lees for 18 months, with a dosage of eight-year-old fortified Shiraz creates a sparkling wine with a youthful lingering effervescence complemented by a leathery structure expressing the aged components.
