Penny’s Hill The Specialized
shiraz, cabernet, merlot
A seamless wine showing an array of dark plum, blueberry and cherry with hints of cedar, dried herb and anise all adding complexity. Offering flavoursome, spicy Shiraz fruit, balanced perfectly by fine, long Cabernet Sauvignon tannins and soft, juicy Merlot characters.The French oak is finely balanced to add depth and class to produce a wine with persistence and poise.
Post pressing, each parcel underwent secondary fermentation and maturation in oak barrels. ( 20% were new oak). After 16 months of maturation and when perfect balance was obtained for each parcel, ‘The Specialized’ was blended. The wine was bottled in October 2018.
Shiraz is sourced from the narrow planted, high density vines of the Penny’s Hill Vineyard. Combined with Cabernet Sauvignon and Merlot from our Goss Corner Vineyard grown on the black, cracking ‘Bay of Biscay’ clay soil
Ready to drink, but will cellar for 5-8 years.
